A popular meal during the week for Garrett and I are some homemade bean burgers. They require just a few ingredients, they are easy to make , and don’t take long to cook. Since Garrett is the one who usually cooks during the week for us, he was nice enough to share the recipe and take pictures for me to share with everyone when he told me he was making these this week. The photos came out great and so did the burgers.
- 2 15.5 oz cans of red kidney beans ( you can also use black beans, white beans, or pinto beans)
- 1 cup dried breadcrumbs
- 2 large eggs, lightly beaten
Seasonings(measurements are estimates)
- 1 teaspoon coarsely ground black pepper
- 1 tsp garlic powder
- 1/2 tsp cumin
- pinch of cilantro
- pinch of salt
1.Drain 1 can of beans and reserve the liquid in a bowl.
2.In a medium size bowl, mash the beans.
3.Drain the second can of beans and add to the bowl
4.Add in the breadcrumbs, eggs, pepper, and garlic powder and any other seasonings.
5.If necessary, add a little of the bean liquid until the mixture holds together but is not wet.
6.Divide into 6 equal portions and shape into 4-inch patties.
7.Coat bottom of a large skillet with olive oil and heat the skillet over medium-high heat.
8.Add the patties and cook.
9..Turn once a crisp brown crust forms on both sides, about 6 minutes total.
Instead of eating these on a bun, we like to eat them on a bagel or wrapped in lettuce. Sriracha, avocado, salsa and kimchi make great toppings on these burgers.
